Kentucky on my mind.

Tonight, I planned our dinner menu in honor of the Kentucky Derby, which was run today. I had been seeing some different recipes that were related to the derby. I would have loved to have had a group of friends over for dinner and had an ugly hat competition and maybe some games, but I didn't realize the derby was today until it was too late...and it was so close to our Cinco de Mayo celebration. I still wanted to make some of the recipes that I saw and what better time to make them than on the day of the derby.

I made a Kentucky Hot Brown Tart and garlic cheese grits. We paired these with a tossed salad. All of the recipes ended up being pretty good. I wouldn't say that I loved them, but pretty good. I also made some banana pudding for dessert...which really had nothing to do with the Kentucky Derby...but I had been planning to make it for a while. I made a custard from scratch and then layered vanilla wafers, bananas, and strawberries and then, I topped it off with a meringue. Then, I baked it until the meringue was golden brown. We let it chill for a couple of hours before eating it. It ended up being pretty tasty.
